We all have crazy eating habits, right???

Growing up, you always heard “3 square meals a day”… who really does that anymore?

I’ve never been a breakfast girl…ย  when I wake up, I always drink a MONSTER glass of water and refill and drink it all day long. If I am famished, Iย take a handful of fruit out of the fridge, cause it’s always there…but then I’mย FULL till like 1:00.

Lunch is my big meal, and always a nice sized salad.

Topped with whatever meat I cooked for the men, the night before, and a “dressing” of spicy salsa or Sriracha or some type of mustard (I have 12 different varieties ๐Ÿ˜‰ ). I like to feel the burn…. and it ain’t good enough if my nose isn’t running when I’m finished ๐Ÿ˜‰ Glutton for punishment, remember.

I mean what’s not to like about crisp Romaine, chopped sweet tomatoes, ripe avocado… with a sprinkling of salt and pepper.. and adorning all that fresh vegetable goodness.. strips of grilled steak… roasted pork loin… marinated chicken breast.. OR If I roll my own way, which has been known to happen a time or two.. Spicy saute’d shrimp or fish. YUM! Can’t wait for lunch tomorrow ๐Ÿ™‚

Thing is… I only eat twice a day, but always healthy and never a whole lot at a time. I guess it’s on my mind right now, that it might not be the “proper” way of eating .. (cough cough, since I’ve allllways been so Proper before… NOT!) But THIS girl has got to look Super Fabulous in a wedding dress in less than 8 months!!! Can we say max out on push ups and crunches, much???

Granted, If I may say so, I look better now than I have EVER looked, in my entire life, but I want to look THE.BEST. in my dress.

So maybe my eating habits should change??? Even if I like my schedule now? I try to eat as Paleo as possible, meaning all veggies, meats and some fruit. No carbs, sugar or dairy.

I eat around noon for lunch, cook dinner around 7:00pm and might taste a bite or two, but because I’m usually up until 2am, I don’t eat dinner until 11 or 12pm.

Unhealthy, I don’t think so… Unorthodox?? That would be me ๐Ÿ˜‰

The rightfully named.. Condiment Queen

Just in case you were wondering…. It’s totally true… and this is only the door of my fridge.

Dressings, “sauces”, mustards, Bloody Mary Mix…..and so on

Not to mention my salsa and marinade collaboration…

Funny thing.. I went to a friend’s house recently, and all she had was Mayo, Yellow Mustard and Ketchup…. I was lost, haha. Where was the rest of the flavor????

Another funny thing… I grilled up some burgers for the neighborhood, and had no less than 5 mustards out for various artists to choose from, and still told them that there were 12 more in the fridge to choose from..

Hoarder of condiments?? I think not.

Chicken and Broccoli Stir Fry

Since I got my wok for Valentine’s Day, I’ve been adding condiments (obviously) and perfecting the flavor of the overall, end result, of my stir fry.

It’s all about the right balance, that makes it essentially… restaurant quality.. If I may say so.

To be honest, I think it’s the marinade for the meat that MAKES this

This is a marinade that I’ve put on the blog before, and, now, it’s my Go To!

3 Tbsp Reduced Sodium Soy Sauce

2 Tbsp Honey

1 Tbsp Vegetable Oil

1 Tbsp Sambal Oleak

2 cloves minced Garlic

Please for the love of flavor… let marinate for at LEAST 30 minutes…(The longer the better)… That’s what she said, haha ๐Ÿ˜‰

It’s just the right flavor profile on any kind of protien… Chicken, Steak, Pork, Fish! I can’t WAIT to skewer some shrimp with it, and throw it on the grill!

Mmmm Mmmmmm deliciousness!

The Breakdown..

CHICKEN AND BROCOLLI STIR FRY

1lb sliced/marinated chicken breast

3 small heads fresh broccoli (cut into florets)

1ย large onion (peeled, halved, short cut)

Soy Sauce (reduced sodium) Rice Wine Vinegar, Fish Sauce, Hoisin Sauce, Oyster Sauce, Sweet Chili Sauce

~Cook chicken in wok or large skillet until just cooked through and no longer pink, remove from pan and set aside.

~Cook broccoli and onion in same pan until crisp tender (I add about a teaspoon or so of each and stir well)

-soy sauce

-rice wine vinegar

-fish sauce

~Add chicken back to pan and stir to incorporate with the broccoli and onion

~Add a TBSP or 2 of each

-hoisin sauce

-oyster sauce

-sweet chili sauce

~If final stir fry sauce is too thin, I add 1 tsp of corn starch mixed with 1TBSP of COLD water, just to tighten it up a bit.

Serve over rice, Chinese noodles, or just eat it out the pot ๐Ÿ˜‰ย  Donโ€™t forget your favorite eggrolls ๐Ÿ™‚
